Gluten Free Biscuit Mix


Homemade Gluten-Free Biscuit Mix:
Servings: 6 cups
Calories: 746 kcal
  • 2 cups sorghum quinoa or coconut flour
  • 2 cups white rice flour
  • 1 cup tapioca or potato starch
  • 3 tbsp raw sugar
  • 3 tbsp baking powder
  • 1 1/2 tsp salt
  • 2 tsp xanthan gum
  • 3/4 cup cool coconut oil
  1. Place both flours, the starch, sugar, baking powder, salt, and xanthan gum in the bowl of a large food processor. Run food processor for about one minute to combine. Add the coconut oil in small spoonfuls. Pulse to combine until the mix in crumbly with bits of coconut oil showing.
  2. Since this mix uses coconut oil it must be stored in an airtight container in a cool place or the oil will melt. To be safe, refrigerate it, but take it out a let it come to room temperature before mixing and baking.
