Gluten-Free Blueberry Paleo Pancakes

Ingredients
  • 4 eggs
  • 1 cup milk buttermilk, coconut milk, almond or rice milk
  • 2-3 tbsp honey or maple syrup
  • 2 tsp vanilla
  • 1 tsp baking powder
  • 1/2 cup coconut or almond flour
  • salt to taste
  • 1/2 cup blueberries or other berries
  • Coconut oil or butter for frying
  • Maple syrup for serving
Instructions
  1. Whisk all the dry ingredients together in a bowl.
  2. Whisk together the eggs, milk, honey or maple syrup, and vanilla in a bowl.
  3. Add the egg mixture to the dry and mix until combined.
  4. Heat some coconut oil or butter in the frying pan on medium heat. Scoop 1/4 cup of batter into the frying pan and press a few blueberries into each pancake.
  5. Cook on medium heat until golden on the bottom. When the top of the pancake starts to show bubbles coming through flip each pancake over to cook on the other side.
  6. Serve warm with maple syrup.
