Gluten-Free Chocolate Avocado Cake with Coconut-Chocolate Glaze

Ingredients
Batter:
  • 2 ripe avocados
  • 1/2 cup rice almond or coconut milk
  • 2 large organic eggs
  • 2 tsp vanilla extract
  • 2 cups Gluten-free flour blend
  • 1/2 cup cocoa powder
  • 3/4 cup raw sugar can reduce by using a bit of stevia 1 tsp aluminum free baking soda
  • 1/2 tsp sea salt
Dark Chocolate Glaze (1 cup):
  • 1/2 cup coconut oil
  • 5 tbsp cocoa powder
  • 3 tbsp honey
Instructions
  1. Preheat the oven to 350°F. Lightly butter or oil an 8-inch round cake pan, then cut an 8-inch round piece of parchment paper and place it in the bottom for easy removal. Set aside.
  2. Place the avocadoes, milk, eggs & vanilla in a food processor and blend until smooth, scraping down a couple times. Whisk together the flour, cocoa, sugar, baking soda and salt. (If reducing the sugar by adding stevia be careful not to add so much that it takes on the bitter aftertaste that comes with stevia.) Add to the processor and pulse until all the ingredients are combined.
  3. Spoon into the prepared cake pan. Bake for 35-40 minutes or until a toothpick inserted in the center of the cake comes out clean. Remove from the oven and let it cool in the pan for 10 minutes, then remove and cool on a wire rack.
  4. Dark Chocolate Glaze:
  5. Melt the coconut oil in a bowl sitting in another bowl of hot water. Remove and dry the bottom. Add the cocoa powder and honey, and mix well. Allow to cool until thickened, stirring regularly, then spread over the top and down the sides of the cake to coat.
  6. Leftover cake can be stored tightly wrapped in the fridge for up to a week, but the chocolate glaze gets really hard when cold. Best to let it warm up a bit first before cutting.
